Building good, cost effective & convenient breakfasts
My job is one of those which has me setting my alarm for 3 AM on the days I’m scheduled. Most mornings, I have the coffee maker set to go on at the same moment my alarm is going off. I usually have enough time to get dressed, catch up on the previous night’s happenings, prep coffee in a travel container, then I’m out the door.
One of my dilemmas is I walk out the door hungry. I usually get a break period around 6 AM. Being I work in a place with a grocery isle, I have my choice of something, which usually runs between $2-$3. Over the course of a two week period, this means I spend anywhere between $20-$30, if not more on break. It would be nice to find a more cost effective option.
Now, I’m a big fan of Starbucks’s oatmeal. It’s a reasonable portion that comes with brown sugar, dried fruit, & mixed nuts if you choose. But at around $3 a cup, this isn’t a daily option.
About a year ago I ran across an article talking about making large batches of steel cut oats & creating portions with mason jars. The reason for steel cut oats is they’re re-heatable, unlike their rolled counterparts. So, I did some research & found they’re actually quite cost effective also. For about 25¢ per serving of oatmeal & 60¢ per serving of mixed fruit & nuts (I chose the digestive health mix from Planters Nut•trition), I can have myself a filling, good tasting meal every morning. Looks like I have some grocery shopping to do.
